Soup, Soul, and Salad

The Chef: Hilary and Gracias Madre, Souley Vegan, and Herbivore

The Menu: Mexican-style cream of butternut squash soup from Gracias Madre, macaroni and cheese and yams from Souley Vegan, and leftover kale salad from Herbivore.  

The Dish: As we near the end of the week, leftovers are plentiful. As you may have seen in Rashida's delectable post from yesterday, Souley Vegan hath bestowed plentiful bounty upon our grateful office, and even post-ginormous feast there was still much to be enjoyed. I also had some remnants of one of my many, many, many Herbivore-derived kale salads, and then I had to throw in the soup for good measure because it's raining. Or, you could always go the opposite route and stock up on vegan Samoas, Thin Mints, and Tagalongs. Tis the season!

Soup and Salad

The Menu: Homemade butternut squash soup and salad topped with fava beans, carrots, cherry tomatoes, red bell peppers, water chestnuts, and balsamic vinaigrette

The Dish: You know what's great when autumn showers descend upon Monday like VN staffers on a birthday cake? Soup, that's what. This tasty bowl of butternut-y goodness is blended up with some local apples that were freshly picked by my roommate yesterday—I was watching the Raiders beat the Texans while she was out, so I was only able to be present for the eating, as opposed to picking, portion of the meal. Soup, Salad, & Spelt

The Chef: Liz

The Menu: A rich, silky soup including roasted butternut squash, carrot, red lentils, green lentils, onion, garlic, potato, and spices paired with a mixed green salad brimming with mushroom, tomato, avocado, celery, green olives, and chickpeas. Liz also toasted slices of Spelt Right's Whole Grain Spelt Bread, which we promptly smeared with Earth Balance and devoured.

The Goods: For most of America, July means high temperatures, and for a lot of the country that goes hand-in-hand with humidity and heat waves. Well, not in San Francisco. We can't say we're mad about the mild in our City by the Bay, but we can say we're happy that today warmed up enough for a refreshing al fresco lunch. Yes, today we happily dined outside and discussed something else we're also currently loving: The upcoming grand opening day of the Bay Area's first all-vegan sweet shop, Cinnaholic!
