Corn Fritters and Caesar Salad

The Chef: Colleen

The Menu: Crispy corn fritters—featuring fresh corn—dolloped with ketchup and vegan sour cream, a lovely Caesar salad with big, crunchy croutons, and fresh strawberries on the side. Yes, Colleen is a fancy chef and spiralized the carrots for the salad. Yes, we like that about her.

The Goods: It's been quite the week of eating here at the VNHQ, and today marks our very last copy of Vegan Yum Yum to give away. First, congrats to Carll from yesterday's comments! My favorite weekend adventure would have to be hiking in the woods. I love being out in nature, especially during autumn!

I'm pretty boring. My idea of a perfect weekend is going for a walk in our local forest preserve or sitting down in my comfy, overstuffed arm chair and reading a good book.

There's not a lot to do where I live, though, unless I want to drive an hour in heavy traffic to Chicago.

My favorite weekend adventure is spending the entire day with my wife and son (and dog, too). Just hitting the trails or even grocery shopping. The adventure is what happens along the way!

My perfect weekend would be going to a farmer's market and picking up everything I need to make a yummy fresh meal for a picnic. Then our little family would head to the arboretum for a picnic. So great to eat outside in the fresh air and just shake the picnic blanket when we're done!

My favorite weekend adventure involves finding a new ingredient I've never used before and experimenting in the kitchen! There never seems to be enough time to cook a new, wholesome meal during the week but on the weekends the adventure abounds!

Taking the dog-kids walking/hiking in the morning, getting them all nice and tired out, and then spending the night in with a good movie and an extra-large, homemade vegan pizza. I'm easy like that.

Favorite weekend adventure? Hands down, it's making the four-hour drive down to see the Giants, with my family in tow, grabbing a veggie dog (or two) each on the way to our seats, then taking in my favorite team in the greatest ballpark on earth (complete with an excursion or two to the fan lot to keep the kiddos happy). Bliss!

Our favorite weekend adventure is going to Montauk with our dear Clementine. She is a rescued pitbull who gives us so much love. We're all vegans: me, my husband and Clementine, and whenever we go to Montauk, after a long walk down the beach, we cook some amazing vegan food. :) It's so good to be vegan!

I've had a weekend lately that came pretty close to perfection: my gentleman friend and I made the trip to Montreal, where we used to live. We had a great time, fabulous weather, and got to see some of our friends. But first, as soon as we got there, we hit Aux Vivres, a local vegan restaurant, for their fabulous brunch. Yum!

My favorite weekend adventure is working in our enormous vegetable garden... there is always something to look at, something to taste and something to do out there!

My favorite weekend adventure is finding a new running route...I love to start my weekend off with a long run on Saturday morning! Long run = lots of calories burned which I can then eat back in short order Saturday night (and Sunday!!)

My favourite weekend adventure would be anything that involves a) portable food, like a picnic b) lots of green and c) water to swim in. I have big plans of living by the ocean so that this can be every weekend! :)

I always have to work on the weekends, so my favorite thing would just be to be able to get a weekend off and spend it with my family, watching my kids play in their games (daughter is playing soccer and son is playing football, but I always miss the games) and then just hanging out doing whatever they want.

I'm training for a marathon, so my weekend adventure is my weekly long run, on Sundays. I'm always sure I'll die half way through, but I always make it to the end. Must be all that tofu. :P

I'd have to say either a short trip up to MHC/Amherst (where we used to go to school), or finding houses that are about to be demolished and documenting transience.

We're lucky in Los Angeles to have a plethora of vegan options, so a fantastic weekend adventure includes visiting a different vegan restaurant each day!

My favorite weekend adventure is doing something outside. This area (East TN) is great for hiking, canoeing, tubing, camping, etc. I love it all!

Every weekend from May to October is the SoWa open air market in Boston's South End. I love walking around, admiring the super creative art, handmade tchotchkes, unique jewelery, and especially the old antique building that they fill with antiques and vintage clothing. There's even a farmers market to pick up some delicious heirloom tomatoes to munch on while wandering!

Going to the farmers' market when there are new, exciting things for sale (I saw the first asparagus of the season today!); making something delicious and healthy with it for lunch, and then doing something to celebrate the warm weather... swimming or picnicking or something.

Can you tell we're just coming into spring here? :)

strolling along the fruit/veg markets in my neighbourhood, going for a hike in the nearby forest, going on a roadtrip- of course, all with good food!

my favorite weekend adventure is renting a cabin near Mt. Hood with a whole bunch of friends. during the winter is the best b/c you have it snowing on you while you're in the hot tub that's outside, which happens to be right next to a bubbling brook. wonderful!

My favorite weekend adventure would probably be a big fancy culinary project. I almost always go to the farmers market first thing on saturday morning, and sometimes I'll spend the whole weekend in the kitchen - making jam, jarring tomatoes, and then on Sundays we have these huge family dinners with about 14 people, for which i usually do the cooking. I love to have a theme, like recently I did 5 dishes all featuring corn (including corn sorbet!)... that's my favorite adventure!

My favorite weekend adventure would be a road trip to San Francisco where I would spend the day thrifting, window-shopping in awesome stores that I can't afford and eating at unique restaurants. I would also throw in some baking, sleeping in and relaxation yoga.

my favourite weekend adventure is going for a long walk in a new area. I love the woods but the desert in winter is wonderful as well. I take my camera and try to get interesting shots without slowing my pace too much. I like ot end up in a place with a view so hills and mountains are a factor in my choice of destination.

Finding a quiet thicket at the foot of cathedral rock in Sedona and having a little vegan picnic for one. With the sapphire blue sky, billowy white clouds, the bubbling of oak creek and the gentle energy of the adjoining vortex at the base of the red, red rocks --- it is absolute perfection. It is nature that reminds me most about why I am vegan.

My favorite weekend adventure is a trip to the beach. I love walking along the shore with the sand in between my toes and the feeling of sunshine on my back. Listening to the waves makes me feel calm and energized.

My favorite weekend adventure would be to head up north to the woods and rent a little cabin near the water. I love to wake up early and go canoeing, looking for wildlife. I enjoy just drifting along the water, quietly watching eagles, herons, loons, and entire families of otters out fishing and playing together. It's an honor to experience such peace and tranquility.
